The Indian cuisine is characterized by the use of various spices, herbs, and other vegetables that are especially grown in India. The vegetarian custom that has spread all over the country has also causes some influence in Indian cuisine nowadays. The common staples that are used in Indian cuisine are rice, atta or whole-wheat flour, masoor or red lentil, chana or Bengal gram, urad or black gram, and mung or green gram.
The next common thing that can be found in Indian cuisine is the oil that is used to cook the meal. There are so many kinds of oil that are used, such as olive oil, peanut oil, mustard oil, coconut oil, sunflower oil, and soybean oil. While, the spices that are most commonly used are chili pepper, black mustard seed, cumin, turmeric, ginger, coriander, garlic, and many other spices. Some spices are used in the dried form, such as cinnamon, clove and cardamom. Some leaves are also used as the unique ingredients of Indian cuisine.
The Indian cuisines itself are various based on the region where it grows. It is possible since the ingredients that are used very much dependent on the crops that grow in the region. Different crops will cause different taste and recipes from certain region, so does on the other region.
